Back a few months ago, I was into all things sweet and unhealthy. Still am, but on a lesser level. I was constantly churning out cookie cupcakes with anything and everything as a filling, as well as the much loved rice krispies.

Oh yea, a few months ago, we also gained 6 new family members. We thought they were all going to grow up into lovely hens and lay lots of eggs for us.

THIS one... however... after 3 months, we find this one to be masquerading as a girl.... but is actually a rooster. So this happy rooster is amongst a harem of 5 other females. Lucky boy.

Anyway, back on topic, those cookie cupcakes were a huge hit when I brought it in for my friend at work. It was her birthday and she's from Hong Kong, so whenever she eats Tim Tams, she gets this really blissful look on her face. It's an absolute pleasure watching her eat because she's one who enjoys her food.

We kept being given these by the boxes, it got to the point where we had about 5 boxes, so I used them up as fillings for my cookie cupcake.
And a cookie cupcake is exactly what it is- giant cookies in a cupcake form.

And once covered, you will have no idea what you're going to get. Tough luck if you're the picky sort who only eats, say, milk chocolate, or dark chocolate, or white, because you won't know which one you're getting. Teach you not to be picky with food~

Ok, so the first batch turned out a bit ugly. I thought once they are in the oven, the surface will smooth itself out because the heat should melt the dough... but it didn't... stupid me, of course cookie dough shouldn't spread itself out.

Meanwhile! This is probably the easiest thing you can make as long as you have marshmallows, rice bubbles and butter. I don't tend to measure my stuff when it comes to rice krispies..

Just approximate. Not so much marshmallows, even less butter, but tons of rice bubbles. Takes maybe 5 minutes to make this... melt marshmallows and butter, take off heat and stir in bubbles, pour into a mould and rifurijeeta it.. or you can just leave it at room temp, whatever works for you.

Back to those cookie cupcakes. In here:
220g unsalted butter, softened
1 cup brown sugar
1/4 cup white sugar
1 egg
1 tsp vanilla extract
I tend to estimate, put less sugar for the sake of my parents...

2 cups + 3 tbsp plain flour
3/4 tsp baking powder
1/3 tsp baking soda
1 tsp salt
(1 cup chocolate chips- optional)
Then the dry ingredients.

These went even faster than the Lindt balls. The good thing about mars is that even when the cookie cupcakes have cooled down, you can just microwave them for about 10-15 seconds, and you get a gooey filling and a warm cookie outside XD

While baking in oven, 180 degrees for maybe 10-12 minutes? Forgot, just until they are done, clean up is easily fixed since everything is quite clean anyway. Whoever invented spatulas need an award. Also cos cookie dough doesn't really make much mess anyway...

My colleagues consumed all my cookie cupcakes ._. didn't even get to take a photo of the finished product. More like I forgot, but hey, it's ok... so this was from back two months ago. Now I can't be bothered making anything and my go-to-treat is grass jelly. From a tin. Just chopped to pieces, sugar, water, rifurigeeta'd and consumed. Easy. Lazy. Summer.
